Sunday January 31st

My favorite day of the week. And for good reasons. Sunday's are the best days, always have been. You can do whatever you want all day or until you want to do something else. This Sunday it was me and Zoe's day to cook, chat and chill. Zoe is Petra's personal assistant who started the same day I got here so we've kinda been newbies together and she's awesome. She is also the mother of Arsa and gives me full control of him when he's here cause we are best friends. I am teaching her to cook western recipes so she can show the other staff members in the future. Last week it was roasted chicken and veggies, and this Sunday it was chili and quesadillas!
They don't have cheese here so this was extra special (and expensive). Carly came over and enjoyed the American treats with us.

Oh! Carly is a gal from the DC area who moved here after graduating from Wellesley college in 2013 for a 4 month internship and ended up never leaving. She is super sweet, very environmentally brilliant and aware and great to have around as an American gal pal. She has basically accomplished the thing I am so constantly after- taking a chance on a place and having all the pieces of that place seem like a great fit and have enough potential to stick it out and invest into. This place is perfect for her and has given her so many opportunities that would be really hard and annoying to accomplish in the states. For example she is basically her own boss, 2 years in. She is heading up her own projects here- one on using compacted plastic waste to use for building materials and supplementing them with other recycled materials. She learned how to ride a motorbike- which I have now also done!!!- and she has 2 cats, a garden and an adorable little house. Living. The. Dream.
